Can’t Get Enough of Coconut


I’ve been on a coconut binge lately. I’m obsessed with baking with coconut oil instead of shortening. I have discovered that coconut milk is also terrific to bake with – and more important – coconut cream (yes, cream!) works almost like regular cream. And did I mention that I love, love, love coconut frozen desserts? Yup, I do.

It seems everywhere I look there’s a new coconut product to check out. It’s a little bit like when you’re buying a new Honda, and your eye picks out only the Hondas on the road. Well, my eye just seems to gravitate to anything coconut.

My latest find is coconut yogurt. With both my son and I allergic to soy, we haven’t had a non-dairy choice for yogurt – until now. These So Delicious coconut milk yogurts come in a number of varieties, and really do the trick. They are labeled dairy free and soy free, but they are free of the top eight allergens (unless, like the FDA, you count coconut as a tree nut). They do, of course, contain coconut.

LOVE the coconut yogurt! It is much better than the other non-dairy yogurts on the market, and I actually like it better than dairy based yogurts! Have you tried whipping the coconut cream to make dairy free whipped cream for desserts? Yum-O!
Also, just saw a coconut/chocolate spread at Whole Foods (think Nutella) that looks sooo good. My DD is allergic to chocolate so we won't use it, but maybe you'd like it!

Allergy mama, I did try whipping coconut cream, but it didn't work for me. What brand did you use?

I'm a coconut addict too! I just did a demo explaining and showing coconut cream, and the latest recipe I posted was scones made with coconut oil. It is so darn versatile!

This stuff is yummy, but very high in sugar. I've been so disappointed with the amount of sugar in allergy-friendly foods. I'm also disappointed that 99% of the recipes for MFA people are all cookies and cakes and baked goods. I find it frustrating that in order to make our kids feel "normal" they have to be fat! Let's not lose sight of what we're doing: we're trying to keep our kids alive by not feeding them allergens. Let's also keep them alive by not giving them diabetes, heart disease and obesity.

Shelly, you make a really good point. This IS high in sugar (as are many milk-based yogurts). I think the reason so many of us focus on baked goods is because those are the hardest (impossible) to replace when you can't have wheat, soy, milk, and eggs. We do have to remember to eat a balanced diet. Thanks for reminding us!

I agree the coconut yogurt is great. My daughters favorite is the pineapple one. I also like the coconut "ice cream" better than the milk kind.
